Our Story
Owning one’s own business is a dream shared by many people, myself included. After working for over ten years at a Lincoln restaurant, and several more for an insurance company, the urge to do something of my own was growing. For me, the challenge always was deciding what kind of business. A few years ago, a friend of ours was talking about a soup and salad buffet restaurant she had visited in another city. She mentioned how much she wished Lincoln had such a place and half jokingly suggested that we should consider opening something similar.
After several weeks of contemplation and discussion with my wife, Kim, I proposed the idea to my parents and my brothers. The idea of a soup and salad bar restaurant immediately resonated with them and they were quickly on board. After four years of research and planning, what started as nothing more than a pipe-dream and an off-the-cuff remark has become a reality.
The dream was mine, but the reality would not have been possible without the love and support from our families. Shadowbrook Salad Company is truly a family undertaking. My parents and my brother Andy invested financially in the dream; my brother Kevin was the general contractor for the building and the interior finish of the restaurant. In addition, Kevin and his wife Charuth own and operate Shadowbrook Farm, a small scale organic produce farm just southwest of Lincoln.
